Andrea’s Banana Bread

  • ¼ cup Becel margarine
  • 111g unsweetened apple sauce
  • 1 cup raw sugar
  • 4 egg whites
  • 3 bananas
  • 1 ¾ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk chocolate chipits
  • ¼ cup walnuts

Mix top 4 ingredients together and then add dry mixture. Pour into mini loaf tins or into muffin pan. Bake at 350 for approximately 25 minutes.

Athlete’s Cookies

  • 1 c. whole wheat flour
  • 1 c. rolled oats
  • ¼ c bran
  • 1 tsp. Baking soda
  • ½ c raw sugar
  • ½ c. raisins
  • ½ c. chocolate chips*
  • 1 egg, medium or 2 egg whites
  • ½ c. margarine, non-hydrogenated*
  • ¼ c. natural peanut butter
  • 1 tsp. Vanilla

Mix ingredients well. Form batter into balls (-2 tbsp) and slightly flatten onto baking sheet. Bake at 350 f for 12-14 minutes. Makes 26 cookies.
